Take half a packet of frozen puff pastry...

Our lovely neighbour R. was asked if he had any rhubarb to spare from his allotment. “Loads” he said, “I'll rip you some up next time I go”. The day after, here is what he brought around to us. He is so kind.


Didn't feel up to doing much of a meal yesterday so opted for a quick and easy one. I had one packet of puff pastry in the freezer and took it out in the morning. By late afternoon, it was ready to use.

I cut it into 4 portions and put two back into the fridge. Once upon a time, we would have managed all of it but not now. Anyways, I used each square (measuring around 2.5” x 2.5” each) and rolled them out to make one savoury and one sweet (which we had with lovely evaporated milk for pudding).

Each square was rolled out to a squarish 9” or so and had a line made with a sharp knife to allow the outer edges to rise. Herewith the pictures.

The savoury base was smeared with a mixture of tomato and garlic puree.


Then a layer of ham and some mozzarella cheese,


basil, oil, salt and pepper.


It was cooked in a 220C oven for 15 minutes. We had half each with some salad.


The sweet square had some leftover Christmas mincemeat, dried cranberries, chopped mixed nuts, cinnamon and honey drizzled over it. 


It was baked for only 11 minutes as I was worried it might burn the nuts and honey.

  2. It was lovely but did fill us up completely. Using the other half of the packet tonight. Will post tomorrow hopefully.

  4. Oh that really does look good. I have taken your advice and not picked my rhubarb at all as it is it's first year, but oh it is so tempting, I love rhubarb and there are stalks just waving at me and begging to be eaten.

    1. I know it is hard but it is for the best. If you are desperate and the stalks are really thick you could risk harvesting 1 or 2 at the most but personally I would leave it. You really will reap the rewards next year!
