No churn ice-cream

The other day, DB fancied making some more ice cream. We have already made and eaten two small batches but he wanted to try Mary Berry's No Churn Ice Cream, the recipe for which can be found here

We decided to make the basic version and stir in 3 tablespoons of lemon curd into the egg yolk part. Here it is, 1 1/2 tubs worth:
A few weeks ago, I made some Vanilla and Elderflower jelly but wasn't happy with the end result. Today I emptied all the jars, added in the zest and juice of one lemon and boiled for 5 minutes. It is a lot thicker this time (4 jars instead of the original 5 jars). It has more of a lemony twang, so guess it should be called Lemon, Vanilla and Elderflower Jelly!:
It doesn't seem to come as clear as a normal jelly, probably due to the use of powdered pectin! Tastes lovely though.

We have also tasted the ice cream. It has a wonderful texture, tastes very good and we will definitely make ice cream this way more often (saves getting the ice cream maker out!).

  2. That ice cream is an easy affair, so I have book marked it for my later use. I`m on a new eating regime to lose weight and shall have to refrain from ice cream noshing for a while. I`ve now lost 6 lb within a week and hope to lose enough to finally fit well into a lovely summer dress I had bought from a local charity shop. Intend to look a lot trimmer for a wedding that we want to attend in September.

    1. Incredibly easy. Might also work with thick natural yoghurt. Good amount of weightloss, keep up the good work.

    oooh - the vanilla and elderflower jelly looks divine! I made some a few years ago as apple and elderflower jelly and it tasted just like honey, it was delicious!

    I've kinda missed the boar this year, but it's definitely on my list for next time

  5. The ice cream looks incredibly easy to make, might try that for a special treat, but as I'm in the southern hemisphere and it's winter, I will wait for the weather to warm up!

  7. Three tablespoons give it quite a delicate flavour. We also think it could also be made with thick low-calorie natural yoghurt.

  8. My favourite M&S yoghurt is their lemon curd one, so adding lemon curd to ice cream seems like a winner to me! I envy your store-room stocking abilities!

  9. Ice cream with lemon curd in it sounds fabulous.
    I treated us to some Swedish Glace ice cream last week - absolutely delicious with strawberries, but it should be at £2 for a fairly small tub!

    1. Nearly gone! I have just strained the last of our home-made yoghurt and added 3 tablespoons of curd to it, ready to make some with yoghurt!
