Tortilla for lunch anyone?

As I am making bread again today, thought I would share with you how to make a lovely quick lunch with some of the dough. If you want to make these, I suggest you times your recipe by 1 1/2, hopefully that should give you 4 or 6 tortilla's. You can of course make these with bought ones but home made are lovely and soft and fresh.

Take off 1/3rd of dough from your bread after its first proving. Reshape the rest into your bread shape and set aside ready to rise again and bake. Meanwhile, divide this 1/3rd into either 4 or 6 balls. Flour your surface and rolling pin well and roll each one out to around 6” - 8”. Prick all over with a fork (forgot to take a photo of this bit).

Lay on one side, some cheese and anything else you fancy. We added pickled chilli and fresh pepper.

Lay the other tortilla on top. You don't need to add anything to seal it.

Roll flat with your rolling pin.


Heat a small amount of oil in a large frying pan (similar amount for when cooking pancakes).

 

Fry for a few minutes on each side until brown.



If you have added a little too much oil, pat them dry with a paper towel. Slice up like a pizza and serve. You can see what we had with them but a salad works well or something similar. You need one whole tortilla per person but 2 would stretch to 3 and 3 to 4 etc. Enjoy!

  2. True, but I was referring to using home made tortilla to make them... and yes, they were yummy.
