Lasagne...

First of all, welcome to my two new followers via Bloglovin - Jill Davidson and Elaine Rickett.

Lasagne is one of a few dishes that I never buy or eat out. I suppose the same goes for any dishes based on mince - one piece of gristle and I throw up!

Anyhow, such an oddity to one side, I made some lasagne mince base, some white sauce and some pancakes - lots of pancakes (well DB cooked them at least!)

DB and FDiL are coming soon to chose their new puppy so I thought I would make us a pancake based meal.

When 3 pancakes had been made, a cardboard template was placed on top and 3 oblongs cut out to fit individual foil dishes:
A lot of work you might think but there was method in my madness:)

Layers of sauce, followed by a pancake were duly put into each dish:
The final layer was home made white sauce and a good dusting of finely grated Grana Padano cheese:
In the end, we had lots of chunky meat sauce and pancakes leftover so managed to make a round lasagne for two evening meals. The first we had last night with a jacket potato and home made coleslaw. The second bit will be for tonight with another jacket potato and roasted vegetables:
So... what did we do with all the leftover pancakes bits from cutting out the oblongs - see - told you there was method in my madness:
They were microwaved, tossed in lemon juice and sugar and we had them for a pudding! Yum yum...
The large round lasagne and 4 foil container versions used 1lb of mince for those 6 meals - not too bad really.

  1. I have never thought of using pancakes for lasagna. What a brilliant idea! I often make and freeze pancakes when I have yorkshire pudding mix left over. Shall definitely be copying this.

  2. What a brilliant idea! When I first saw your post in my blog-feed, the small photo was showing me, or so I thought, the pan scrubber you dropped in a dish of lasagne! Funny, I thought, what is she up to now? How I chuckled when I realised it was a template on a pile of pancakes! Hope you are keeping warm in this cold windy weather. I saw there were lots of council environmental chappies in town today, looking busy round the drains in the High Street, and near the quay. Not sure what they are expecting, but good to see they are doing the Be Prepared bit!

    1. Unfortunately, it stuck after 2 lots of cutting so it was then wrapped in cling film which worked a lot better. No idea what the council chaps were doing - maybe going to clean debris out?

    2. I think they were being prepared for any watery mishaps that may be heading our way. No high tides due but ++ rain and that area is prone to flooding..

  4. Pancakes always look so nice, but I've never liked the taste of them or the smell of them cooking.Shrove Tuesday was always torture for me when I was little and my Mum was cooking them for everyone else!

    1. I agree about the smell of them cooking (plus the long standing smell in the house afterwards!). I think I love them because we did only have them once a year when little and now, we only have them a few times a year.

  6. I too wondered about the blue object in the middle. I must say the lasagne sounds very tasty as do the leftover pancakes - can't beat a good squeeze of lemon and a sprinkling of sugar - Mmmmm

  7. I love the use of pancakes in a lasagne, it gives a very different texture, they are great for cannelloni as the tubes you buy are so expensive. Best bit is the left overs with sugar and lemon!
