We will be helping DS and DDiL move soon so thought I would get ahead and do some baking to keep our energy up!
First off was 1/3rd of the flapjack recipe from here You will need to scroll down to find the recipe. Mine ended up a little too thin and crunchy but very tasty so next time, I will use 1/2 the recipe in the same sized tin. We also could not cut it for the same reason so just broke it into chunks which filled two of these containers:
Next up was Gingerbread or in this case large muffins. The recipe for this comes from here Be warned though, this was very runny and I had to pour it into a jug to 3/4 fill 12 large muffin paper cases:
I also added two grated balls of preserved ginger. We shared one with a cup of tea, the rest will be saved.
Finally, having done that plus other things, the weather was so cool we decided to have our first proper autumnal meal of mutton mince, potatoes, home grown mixed beans:

The one time I made gingerbread it was also very runny, it rose alarmingly in the oven and overflowed, making a right old mess on the oven floor. It's definitely getting autumnal, soon be stew and dumplings time.
ReplyDeleteThis was very runny, more like milk so I put a tray underneath just in case. Yum to stew and dumplings as well!

ReplyDeleteYum to the ginger mufins. I've baked today too - a banana cake and some lemon muffins. We're having an Autumnal tea today - vegan mince and veg pies ( homemade), with broccoli and homegrown French beans. The pies are in the oven as I type!
It is certainly the weather for warm food. I'll fill you in about the move after we return.
DeleteHello! Do you mean "double the quantity in the same size tin"? Or am I being dense? I love flapjacks so wouldn't want to mess up!
ReplyDeleteHer full recipe uses 3 tins of a specified size so as I cut the recipe down to just 1/3rd of her recipe, I used just one tin of a similar size but they came out only half the thickness of hers. So, if I make them again, I shall use 1/2 her recipe but in just one tin, if that makes sense?

ReplyDeleteThey tasted nice but were a little dry. We have now decided to just use a Victoria sponge recipe, add dried ginger to the mixture plus so 'balls' of chopped up preserved ginger.
DeleteYour baking looks lovely and certainly will help keep energy levels up, just needs a nice cup of tea to go with them. I am staying at mums at the moment, so tucking in to home cake tea cakes. Nothing like being 'home' with mum and her cooking x
