Layered Cashew Nut and Mushroom Loaf

I must admit, her version photographed much better than mine. We enjoyed it but I didn't enjoy it as much as usual. There is enough here for 6 - 8 people. We had two slices each and used between 1/3rd and 1/2 of it.

Here it is after resting for 10 minutes from the oven:
Served with a few vegetables. We had stewed apple and cream later in the evening. A bit brown looking but everything from this era of recipe books, seems to look dark.

  1. Similar and less faff than my mini layered veggie nut roasts that I've made for Christmas. They have carrot and cranberries too and no mushrooms.

  4. I'm trying to eat more vegetarian meals and this sounds a good one as hubby loves anything with gravy.

  5. I often make a nut loaf, but dont really follow a recipe. Mine are usually granary bread made into bread crumbs, chopped mixed nuts (I have washed salted peanuts before now) and grated cheese. You can add mixed herbs, cooked squash,mushrooms, leek, cranberry, chestnut, a tablespoon of chutney. I then bind with beaten egg and bake in a loaf tin. It's great for using up bits and also a good stuffing to have with meat. I slice the loaf and wrap in foil and freeze.

    1. Sounds good. What ratio roughly of nuts to breadcrumbs?

    2. I'm not sure, I just tend to throw bits together, the last one I made I used a bag of mixed nuts from lidl and four slices of granary bread. (It definitely tastes better with granary bread)Added grated cheese and chopped spring onions. It's also good to leave a few nuts a bit chunky for texture. It also makes a really good topping for flat mushrooms and the stalks can go in the mixture.
