Whole Orange Almond Cake

Having not had any cake for months, decided to do this recipe. I made half the quantity to try it out, using 1 1/2 clementines instead of an orange. This meant I didn't have to boil the orange beforehand. Instead they were chopped and chavelled up in my food processor before being finished off in my Nutribullet to make a puree. Yep, more washing up but no boiling! 

Doing these alterations meant the mix was more liquid than originally intended, but it didn't matter in the end. I also changed them into muffin cases and baked them for 22 minutes at 190C:

No raspberry coulis but moist and gorgeous as they are!

  1. I have done a similar recipe from Nigellas book.- But it never occurred to me to do them in muffin cases, that's brilliant! They look superb. I don't knw the word chavel - but discover it is an old dialect word for chew. I shall make sure to use that in conversation sometime

  2. How did you know I have 1/2 of a mesh bag of clementines on my counter, needing to use used asap! I will use 1-1/2 in this recipe and use the rest in a fruit salad for Thanksgiving Day on Thursday. Thank you for the recipe link.

    1. They are moist enough to use as a pudding (dessert) of some kind as well.

  4. I have seen recipes for this cake before but never made it because of the thought of having to boil the oranges for two hours. I must try it your way or, as I have some delicious navel oranges on the bench, may even get around to doing the boiling bit. Thanks for the reminder.

    1. I have used an orange before. I zested it, cut off all the white pith and threw it away. The inner orange was checked for pips, liquidised and added to the cake along with the zest.
