Although it is later than I would like to harvest rhubarb, it was so late getting going I took the chance. I had already frozen about 2lb, this time we got another 4lb for freezing for winter use.
About 3/4lb was leftover so along with apricots and sugar, it will be turned into a crumble:
We enjoyed it for tea last night (a tad too much) but it was all we ate...
It's a pity, but all the things I like to eat - fruit crumble, meat pies, stew with dumplings or cobbler topping, toasted sandwiches, crumpets, rice pudding - are all the carby things that disagree with my gut and make me bloated now. And all the things Mum cooked when we were kids!

DeleteI've got a few more stalks about to be picked- but not enough on their own for a crumble. I'd never thought of adding apricots to the crumble mix. Thanks for that inspiration
ReplyDeleteI often mix in apples or pears to stretch things. Helps with the sweetness as well.
DeleteIt's been a bumper year for our 2 rhubarb plants this year. Husband likes it on its own, stewed with custard. I've got several bags frozen to use in winter crumbles too. I just pull mine, rinse it and chop it, then freeze - not sure if blanching is required but I've never blanched mine.

DeleteOur rhubarb is done for the year, and is dying back. I picked apples and blackberries today... very Autumnal!
ReplyDeleteOur blackberry is delivering well at the moment. No apples though. Hopefully some will appear at garden gates soon.
DeleteWe're leaving ours now but I have some bags in the freezer. The apples and pears are coming on well, the blueberries are lovely at the moment and the autumn raspberries are just starting. It's such fun, isn't it?

My apples are rubbish so have just lobbed them hard back! Brambles are good. Most toms are green:( on the whole, great fun.
