Garlic Honey

 I found this particular version on YouTube from Old Alabama Gardener, here: who sadly has recently died.

I used 3 whole heads of garlic, putting the cloves into a bag and whacking them with a rolling pin to release the skins. This took three attempts.

Once all the skin was removed the cloves were chopped further and placed into a jar, I'm using a Kilner style jar but if it works well, will get a fermentation jar for future trials of other items.

Raw honey is supposed to be used but I couldn't get any. I did however have 1/2 an old jar of Manuka honey plus a new jar of regular honey so used those to top up the jars of chopped cloves of garlic:

The jar will be gently shaken in a swivel style as it is burped morning and night. It will live in a cool kitchen cupboard for 20 days, before being ready to eat. From that day, it is stored in the fridge.

Boy it stank the house out for 24 hours, had to hide it in the microwave!

  1. Never heard of garlic honey....what would one use it for? Does it taste strongly of garlic, or more of a sweet honey flavour?

    1. At the moment, very hot garlic. It is supposed to get milder as it ages and can be stored in the fridge for a year of longer. General health, salad dressing, coating chicken before roasting. Still reading to fathom out uses.

    1. Still reading up to find out. I am trying to extend my herbal medical cupboard. I missed making elderberry cordial for winter which is excellent for winter ailments.

    1. Not at all, no pain no gain is the motto in this house. Doesn't smell much now but I can tell it is fermenting, which is correct.

  5. As a real garlic lover I bet your house smelled gorgeous. I might make a small jar just for the aroma ... beats Christmas scented candles any day ;-)

    1. It stopped after 3 days probably due to not using raw honey. Now in a screw topped jar in the fridge.

  6. Honey garlic spareribs was my favourite when I ordered Chinese takeout. Would be good drizzled on a stir fry too. I'm sure you'll enjoy the taste as well as the health benefits.

    1. Hopefully so. Once the garlic has softened a bit I shall eat a spoon every now and then, see how it goes.
