Sunset and pantry corned beef hash

Captured this lovely sunset the other night:

Looks like a painting doesn't it?

I used up the last of the corned beef - cubed, plus a can of new potatoes - smashed, a can of beans, and a small diced onion, to make corned beef hash in the air fryer:

It took 12 minutes from start to finish. Would have been even better with some diced tomatoes but there wasn't any, hey ho!

  1. Shortage of fresh tomatoes even made the Radio 4 news!

    1. Been expecting it for a while just didn’t know when. Heard about the probable shortage in summer.

  3. I am going to try beans in my hash the next time I make it. I usually just use corned beef, leftover mashed potatoes (or hash browns) and onion. Sometimes a little gravy if I have any leftover.

    God bless.

    1. Beans normally make it a bit more moist but we eat it both ways.
