Below is a picture of almost everything used to create a large saucepan of chilli. We only used half the butternut squash:
We added enough water to cover the top of the vegetables and simmered it for about an hour. After that the kidney beans and stock cubes were added. 15 minutes later, it was thickened with oat bran and tomato puree:
We had one plateful each plus another 3 containers went into the freezer, enough for 3 more platefuls each. Yum!
Not sure I could eat vegetarian (well not a whole one) although I am cutting down on red and processed meat, but the caveman is strong in me ;-)
ReplyDeleteWe aren't vegetarian but eat less meat now due to cost. Often chickpeas replace the protein.

DeleteFrugal cooking at it s very best, healthy, tasty and so inexpensive. I have an old plastic mayo jar and stuff it with parsley and freeze. I crumble some to sprinkle over dishes like this. I probably would sprinkle this with a little bit of grated cheese and maybe a dollop of left-over sour cream.

DeleteWhat an excellent idea - carrots, courgettes, onions, red kidney beans ... with the tomato and seasoning, a lovely veggie chilli ... I would do this right away but I've just used the last of the courgettes in courgette and tomato soup! But I will make a mental note of this and do it once I've restocked the veg drawer in the fridge.

I enjoy your blog so much, especially the fact that you have continued on the gluten free path. Originally I thought it was just for your DDL at Christmas but it's obviously been of help to you too.i'm dying to try the mincemeat creations of last week but will wait till we come home again. Sue
