Deciding to make a lemon sponge cake, I had a mental block. I should have used 2 eggs and that weight for everything else, except sugar. Nope!
I used 1 egg and the result is a lovely lemon sponge, but tiny:
We cut it into 6 slices and shall eat one slice each over the next 3 days. It is still nice despite being only 1" tall at both ends!
As I am still trying my low fat diet to slightly reduce cholesterol, that will be it for another couple of weeks. I also didn't top it with lemon and sugar to reduce calories.
Did you cook it in your air fryer? I think I'll just stick to cupcakes, muffins or scones in mine now....although not for the next few weeks whilst we're also trying to cut down on carbs and lose weight!
ReplyDeleteYes. Air fried for 22 minutes at 190C. Covered with foil for 15 minutes then uncovered.

ReplyDeleteWhen I want to make a round cake for the two of us, I just make one round sponge cake in one of my tins, using 2 eggs and equal weights, and then cut in in half across the centre and fill it with jam or buttercream. Then you can take a photo from the front and it looks like a full cake or from the top and you can see it is just half a cake.
