Piccalilli spread

After making my piccalilli, I set to this morning, with an altered batch, this time more finely chopped to try and create a piccalilli spread. Although we like chunky piccalilli, we find it breaks up sandwiches too much.

On the left is the normal type, finer cut on the right. I didn't want to risk going too small otherwise the vegetables might lose their crunch.

  1. I love piccalilli but I never likey homemade. It's usually too chunky and the veges hard and taste overpowering. I buy it if I can find it.

    1. Thanks. I like the vegetables crunchy which is why I make it:) I think home made can be overpowering if sugar/vinegar ratio is a bit out.

  3. I am certainly going to give it a go, the idea of a sandwich version appeals.

    1. Keep the veg as small as possible. I also only salted the small version for 6 hours.
